Hi guys hopefully you were able to catch my delicious side dish sweet potato recipe. I had a bunch of cubes of sweet potatoes left and some seasoned chicken from the fried chicken I made this weekend so I thought I would make foil wrapped chicken and sweet potatoes. And then while scrolling through the Internet I saw the Pioneer Woman making Sheet pan chicken and dressing and Eureka a delicious idea was born. This is what I refer to in my house as a walkaway meal. You put it all in one pan put it in the oven and walk away. Are you ready here comes goodness.
2 lbs of chicken (I used drumsticks and thighs)
3 tablespoons of your favorite seasoning
1 large sweet potato
1 bag frozen sweet corn
2/3 cup butter
1/4 of oil
Premade cornbread or a heavy regular bread as in French bread
Season chicken with your favorite seasoning making sure to coat the chicken. Place chicken in a pan I used a foil pan with the lid you can use a sheet pan or a regular 9 x 13 baking dish. Peel and cut sweet potato add to pan with chicken. Sliced butter into small pieces place around the pan. Pour oil over chicken and sweet potatoes and gently shake the pan so everything settles. Put the foil lid on or place foil on top to cover place and a 350° oven for two hours. Stir sweet potatoes at the one hour mark. While dinner is cooking cut up the bread or cornbread and cover until the end of the meal. 10 minutes before pulling it out of the oven for the frozen corn over the top. Remove from oven . If you’re using regular bread melt 1 tablespoon of butter pour over the top toss the bread and put in oven to toast for 5-7 minutes. If using corn bread just cut up in place on top of meal after plating.
